A Jason Bakery x Devil’s Peak Beer Company Collaboration.
We got stuck into some tasty baked goods with the captain of bread, Jason Lilley, owner and co-founder, along with his sister Brigitte Lilley, of the ever-popular Jason Bakery in Cape Town. There’s no doubt about it that this guy knows what he’s doing when it comes to making great bread and baked masterpieces. This Imperial Pastry Stout, created and inspired by the Jason Bakery Doughssant – yip you guessed it, a doughnut croissant hybrid, what could be better than this, right? This doughnut, croissant hybrid hit Cape Town’s shores in early 2013 when Jason decided to take on the challenge to create unique flavour combinations every week. These mouth-watering treats sell out within minutes every Saturday morning, as the crowds flock to get their hands on this weeks’ new and extravagant flavour combinations.These delectable pasties sparked JC, Devil’s Peak’s head brewer’s, creative juices, as he took up the task to mimic one of these signature doughssants to create an imperial pastry stout, that is sure to blow your mind.
What is a pasty stout you ask? This beer style as is simply as it sounds, a stout that has been inspired by a particular pastry and the brewer attempts to replicate the flavours and components by making use of similar ingredients of a particular pastry. When we sat down with Jason, we asked him which of the doughssants he had created to date was his favourite, and his answer was the “peanut butter, choc-chip cookie, marshmallow doughssant.” Together we agreed that this would be the pastry that would inspire this pastry stout creation. To make this beer, we’ve taken homemade marshmallows, supplied by Jason Bakery, added them into the boil, along with cocoa, chocolate malt and biscuit malt to give you those choc-chip cookie flavours, as well as the doughnut, croissant characteristics. The addition peanut butter falvourant to the beer, although subtle in the finished product, it certainly compliments the peanut butter crème pat flavours of the doughssant. Overall giving you the full experience of the doughssant in the beer.

This core ethos of Jason Bakery is what caught our attention and ultimately lead us to include them in our collaboration series, as through this series we aim to recognise true local craftsman that are bringing world-class products to our homes. Whether you eat it or drink it, this decadently rich, silky smooth, imperial pastry stout is delectable, incredible and oh so bittersweet. Inspired by a one of a kind doughssants, this collab beer and doughssant are too good to miss.
